Maine Oyster Sliders

Ingredients

  • 6 slider buns (mini, we like Martin's potato rolls)
  • 6 whole oysters (shucked)
  • flour (for dredging oysters)
  • oil (for frying)
  • dill pickle slices
  • lettuce leaves (iceberg, torn to size)
  • 1 cup mayonnaise
  • 2 tablespoons Old Bay Seasoning
  • bun (1. Bottom)
  • mayonnaise (2. Spread of old bay)
  • 1 pickle slice (dill)
  • 1 oyster (crispy)
  • 1 leaf oyster (atop)
  • bun (6. Top)

    Directions

    For the sliders: 

    1. In a large, heavy-bottomed pot or cast-iron pan, add frying oil. Heat oil to 350 degrees, testing with a frying thermometer.  
    2. Coat oysters evenly in flour, then add the oysters to the oil and fry until golden brown and crispy (about 1 minute).
    3. Remove from oil and season with salt and pepper.

    For the Old Bay mayonnaise: 

    1. Mix mayo and old bay together thoroughly.

    Slider assembly:

    1. Bottom bun
    2. Spread of old bay mayonnaise
    3. 1 dill pickle slice
    4. 1 crispy oyster
    5. Iceberg leaf atop oyster
    6. Top bun
